Cava Dragón

Cava Dragón is a vineyard and restaurant in the Guadalupe Valley, in El Porvenir, Baja California. It is a Mondragón family project that began in 2019 with the vineyard and opened its tasting room and restaurant in 2022. Its philosophy is minimal intervention: selecting and harvesting the grapes at the exact moment, adding or removing nothing from their original flavour, without affecting the purity of the fruit. The winery practises sustainable and biodynamic viticulture with organic practices. Its wines include Merlonix (Merlot), Hraun (Cabernet Sauvignon and Merlot), Drekis (Sauvignon Blanc), P-61 (Muscat and Sauvignon Blanc) and Cabernet Sangiovese (Cabernet Sauvignon and Sangiovese). Its online shop sells Pink Ferret 2023, a sparkling rosé in cans. Its open-air restaurant serves starters, pizzas and main courses, with wines, sangrias and non-alcoholic drinks.
