Cava Sol y Barro, in the Valle de Guadalupe, was founded by Aimé Desponds in 2005 and uses natural techniques for its earthen buildings. It makes a Malvoisie, a Tempranillo, a Grenache from a dry-farmed vineyard more than 75 years old, a Graciano, a Syrah and a Barbera with 20% Nebbiolo, aged in oak. Its tasting takes in seven labels, poured with the WineKeeper system. Per Google, it opens Monday and Thursday from 11:00 AM to 5:00 PM, Tuesday and Wednesday from 12:00 to 5:00 PM, and Friday to Sunday from 11:00 AM to 6:00 PM.
